Crystallization is a completely normal and harmless process that reflects the purity of the product. It’s a sign that no additives or stabilizers have been used.
Here's why you might notice it sometimes and not others:
- Natural Sugars in the Juice: Fruit juice concentrates contain naturally occurring sugars, such as fructose and glucose. These sugars can sometimes crystallize, especially when the concentrate is stored in cooler temperatures. If the bottle has been in the fridge or a cool pantry, the sugars may come out of the liquid and form crystals.
- Variation in Harvests: Every fruit harvest is unique, with slight differences in sugar and nutrient levels depending on weather, soil, and growing conditions. These natural variations can influence how prone the concentrate is to crystallization.
- Storage Conditions: Temperature changes play a significant role. Storing concentrate in colder conditions increases the likelihood of natural sugar crystals forming, while warmer storage may prevent this. However, to preserve freshness and quality, concentrates are best stored in a cool, stable environment.
- Batch Differences: While we strive for consistency, every batch of concentrate may have slight differences in sugar concentration or other natural components, which can make some batches more prone to crystallization than others.
What You Can Do: If you notice crystallization, it’s completely normal and harmless—it’s a sign of a natural product with no additives to prevent this process. If you wish to dissolve the crystals, simply place the bottle in a warm water bath for a few minutes, then give it a shake.
